Ingredients

    10 serving Kirkland (Costco) Sweet Italian Sausage (1 link) (by JODYDESSI) 20 serving Baked Red Potato - Small (1.75-2.5" diameter) 2 cup, strips Green Peppers (bell peppers) .5 cup, chopped Onions, raw 4 tbsp Extra Virgin Olive Oil 1 tsp Salt (table) (by CYNDYY1) 1 tsp Pepper, black

Directions

Preheat the oven to 350F. If using russet potatoes, peel and then chop into bit sized cubes. If using red potatoes chop into 6ths without peeling. Slice up the peppers and onions. Mix the potatoes, peppers and onions together with the olive oil, salt and pepper. Lay the sausage on top of the mixture, then cover with aluminum foil. After 90 minutes check the potatoes. If they are close to done, remove the aluminum foil so the sausage can brown and bake another 30 minutes. If the potatoes are still hard, turn the heat to 375F and bake for another 20 minutes covered. Then remove the aluminum foil and back for 30 minutes for the sausage to brown.
