Introduction
I enjoy balsamic vinegar in dishes because it adds a nice depth to the dish. Please do not substitute it with any other vinegar sitting in your pantry. Do yourself a favor a get the good stuff. Ingredients
-
2 tbsp olive oil
1 large shallot = 4 tbsp chopped
4 cloves garlic minced
2 large portabello mushrooms
1 cup shiitake mushrooms
1 cup fresh broccoli or frozen
1 tbsp balsamic vinegar
10 oz cooked pasta
Directions
*Feel free to substitute any mushrooms if the portabello and shiitake are not available. Just make sure they are fresh and not canned.
Saute your veggies in the olive oil until they are wilted to the degree you like. Add the vinegar and season with salt and pepper. Add the veggie mixture to the top of the cooked pasta and serve while hot. I like adding a bit of soy parmesan to the top. Delicious and quick!
