Introduction

Panzanella is an Italian salad made from stale bread and vegetables. My version has fresh zucchini, peppers, tomatoes and onions, plus tons of basil and parsley for flavor. Number of Servings: 4

Ingredients

    1 medium zucchini, cubed
    2 large tomatoes, chopped
    1 medium red bell pepper, chopped
    1/2 medium white or red onion, chopped
    handful each of basil and parsley, chopped
    1/2 t oregano
    2 T vinegar (red wine or balsamic)
    3 T olive oil
    2 slices multigrain bread, toasted and cut into croutons

Directions

Chop all vegetables and herbs. Add to bowl (not a metal one), then add vinegar, a bit of salt and pepper and the olive oil. Toss well.
Add bread to the bottom of each bowl when you're ready to serve. The crusty bread soaks up all the good flavors of the salad!
Serves 2 for lunch or 4 as a side!
