Introduction

Very quick and very good. The kids will love it! Tastes like a personal thin crust pizza. Very quick and very good. The kids will love it! Tastes like a personal thin crust pizza.

Ingredients

    1 matzo cracker (33 g)
    12 pepperoni slices
    0.25 cup pizza sauce (I used Ragu Tomato, Garlic, & Onion sauce)
    0.25 cup 2% mozzarella shredded cheese
    2 T chopped green peppers

Directions

Put matzo cracker on microwaveable safe plate. Spread pizza sauce evenly on cracker. Put pepperoni slices on top of sauce. Sprinkle green peppers next. Put in microwave for 30 seconds. Remove from microwave and sprinkle on cheese. Put back in the microwave and cook until cheese is melted, about 1-2 minutes.

Makes 1 serving.

You can lower the fat and sodium by using another meat other than pepperoni, such as lean beef, chicken, or turkey. Add any veggies that you would like, could even make it a vegetarian pizza. You could also break/cut the matzo into half or quarter it to make a nice, easy snack.
