Ingredients

2 cans black beans (drained)
2 cans niblet corn (drained)
1 avocado (chopped)
2 medium tomatoes (chopped and seeded)
1 red onion (chopped)
4-5 Tbsp fresh cilantro (chopped)
3 Tbsp red wine vinegar
1Tbsp olive oil
2 Tbsp lime juice
Directions
Mix first six ingredients together in a large bowl. In separate bowl mix last three ingredients and then pour over vegetables. Mix well then refrigerate for at least 3 hours before serving. Serve with baked tortila chips or eat by itself as a side dish.
