Ingredients

2 lbs fresh Chicken Sausage links, mix and match favors.
.5lb peppered Bacon, cut into pieces
1 large Onions, raw, diced
2 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers), diced
12 oz serving Baby Bella Mushrooms, chopped
large bin Spinach, fresh, roughtly cut
5 serving Clove of Garlic (by BCOH1478), crushed
3 cup Meijer all natural pasta sauce, chunky three cheese (by BALEGALEAGLE)
8 oz Provolone Cheese, in 6 large slices
1.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
Directions
Cook the sausage links on a skillet, or a grill for more flavor, until mostly done, it's ok if there's a little pink in the middle. Let rest then slice.
in a large pot, cook the bacon pieces until the fat is rendered, then remove the cooked bacon, leaving the grease.
Add the onion and cook a few minutes. Add the bell peppers and garlic, and cook a few minutes, stir in the mushrooms.
Add in salt and italian seasonings to taste.
Add the spinach a handful at a time, stirring it in and letting it wilt.
Stir in the bacon, quinoa, and pasta sauce.
bring to a boil and simmer for 20 minutes covered, then 10 minutes uncovered.
Divide into 6 oven safe dishes.
Top each dish with a slice of provolone cheese, and place in a broiler util the cheese melts and begins to brown.
Serving Size: 6 hearty large bowls
