Ingredients

    4 serving Graham Crackers Honey Maid Honey Grahams Nabisco (GS) 8 crackers= 2 full sheets
    1 stick Butter, unsalted
    4 large Egg, fresh, whole, raw
    10 tbsp Borden Eagle Brand Sweetened Condensed Milk
    0.5 cup Lime Juice

Directions

Melt butter in 8” or 9” pie plate and microwave until mostly melted. Grind or crush graham crackers and pour over butter. Stir until crumbs are evenly buttered, then pat into bottom and sides of pie plate until uniform and the crust seems firm. Bake at 330 F for 10 minutes, then allow to cool while assembling filling. Separate 3 egg whites into medium bowl and set aside. Put yolks and remaining egg white in large bowl and mix on high speed for several minutes until slightly thickened. Add Key lime juice (Nellie & Joe’s is best) and mix on high speed for several minutes and somewhat thickened. Clean beaters and mix egg whites on high until almost dry. Pour egg whites over egg yolk mixture and fold in with a large spoon or scraper until fairly well blended/mostly uniform. Pour into pre-baked crust and bake at 330 F for 30 minutes or cracks appear in the center and the top is a little golden. Cool on counter, then freeze. Serve frozen, with or without whipped topping. Use large wet knife to cut pie cleanly. Serving Size: 8 slices in 8” or 9” pie plate
