Ingredients

    After reading about a dozen recipes I decided to wing it!

    907g bag of broccoli florets
    1/4 cup bacon fat or butter
    4 slices of cooked bacon, diced
    1/4 cup flour
    4 cup 2% milk
    1 cup chicken stock
    1 meduim carrot, shredded
    1 cup chopped onion
    1 tbsp chilli flakes
    1 tbsp seasoning salt

Tips

Adding chill flakes is optional but adds a nice subtle heat!


Directions

Dice onions and place in pot, pour in fat and carrot and cook until browned. Add in flour, stir/cook for appx 2min. Add in liquid, in batches, stirring well. Add in broccoli and simmer on low for 30min, stirring often. You can blend this, but I just took a potato masher in the pot and everything broke down fairly well.

This recipe can definitely be halved, this one makes 10 one cup servings.
