Ingredients

- 250 g (2 cup) white flour
- 3 eggs
- 1/4 L (1 cup) milk
- 100 g (1/3 cup) cane sugar
- 2 tsp vanilla sugar or vanilla extract
- 2 Tbsp melted butter
- 2 Tbsp rum or brandy (optional)
- 1/4 L filtered water
Directions
This recipe makes 18-20 8" crêpes. It says that the total prep and cook time is 15 min -- not entirely true, it takes about 10 min to mix everything, then ideally the mixture should sit in the fridge for a few hours (this really does make a difference, believe me!), and then it takes about 5 minutes to cook each crêpe.
I have frozen the mixture before with success. I have also made crêpes in advance and kept them in the fridge, so that I can grab one, spread some jam on it, and have it for a snack when I feel like -- though, obviously, they're much better when fresh.
