Ingredients

    1 tbsp Extra Virgin Olive Oil
    2 Medium Russet Potatoes, raw

Tips

If there's no room in the fridge to chill the potatoes, add just enough water to cover the fries then fill the bowl with ice and let sit on the counter. Replenish the ice as needed.


Directions

• Rinse and slice potatoes into 1/4" thick sticks.
• Place potato sticks in bowl of water after cutting, then rinse.
• Return potatoes to bowl and cover with cold water. Place in fridge for at least an hour.
• When ready, drain water and pat potatoes dry with paper towel or clean dish towel.
• Return to dried bowl and add olive oil. Toss and make sure potato sticks are thoroughly coated.

Add fries to Air Fryer basket and set temp to 450°, cook for 20 minutes.
Check fries after 15-20 minutes and toss/rearrange with small tongs so undercooked fries are towards the top. Cook for an additional 10 minutes and check again. Cook to preference.

If you don't have an air fryer, preset oven to 450°. Line a large cookie sheet with parchment or foil.

Spread oiled potato sticks in a single layer on baking sheet. Cook for 20-30 minutes, then turn potatoes.
Cook for an additional 15-20 minutes, then check for doneness.
Times will vary per oven and preference. Time can also be reduced in you use a convection setting. (Which is what an air fryer is.)
