Ingredients

    1/4 cup green beans, cut into 1/2 inch pieces
    5.5 oz can tuna in olive oil
    1 TBSP capers; rinsed & drained
    1 TBSP sun-dried tomatoes in olive oil, minced
    1 TBSP olives; minced (I used green & kalamata)
    1 whole scallion
    1 tomato; peeled, seeded and diced
    1 TBSP parsely or basil chopped
    1 TBSP olive oil
    2 TBSP lemon juice
    freshly ground black pepper
    a pinch of salt (optional)

Directions

Prepare an ice bath. Bring 2 cups water to a boil. Blanch the green beans for 1 minute or so. Drain and plunge to the ice bath. Drain and pat dry.

Drain tuna. Place in a bowl and add all other ingredients. Mix well. Season with salt & pepper. Chill before serving.

Serve on a bed of greens or with your favorite veggies or crackers.
serves about 4 - 1/2 cup servings.
