    1.5 serving Great Lakes Gelatin Collagen Hydrolysate Unflavored Beef Kosher serving size 2 Tbs (12 g)
    0.5 cup Olive Oil
    2.0 cup, sliced Zucchini
    1.0 tbsp Vanilla Extract
    3.0 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g)
    1.0 tsp Baking Soda
    1.0 tsp Baking Powder
    1.5 tsp Cinnamon, ground
    3.0 tsp Folger's classic roast - Instant Coffee
    2.0 tbsp Cocoa, dry powder, unsweetened
    0.5 cup, chopped Pecans
    2.0 bar, large (21 squares, 4 oz) Hershey Special Dark Sweet Chocolate Bar

Directions

Preheat oven to 350 degrees. Mix everything but the chocolate chunks and nuts in a high speed blender. Stir in the chocolate chunks and nuts. Scoop into prepared muffin pans. Bake for 15 to 20 minutes. Can also make a 9 by 13 inch cake pan which may take longer to bake
