Introduction

No added sugar! Instead I used some unsweetened applesauce to add some sweetness along with some dark chocolate chunks! So good! Although a little high in calories it all comes from the healthy fats in the walnuts, coconut oil and almond flour. Loaded with fiber from the bananas and almond flour with only 8g net carbs these are sooooo delicious. No added sugar! Ingredients

    1.0 large Egg, fresh, whole, raw
    1.0 tsp Vanilla Extract
    1/3 cup Coconut Oil
    4.0 medium (7" to 7-7/8" long) Banana, fresh-- mashed
    1/2 cup, chopped Walnuts
    1.0 tsp Baking Powder
    1.0 tsp Baking Soda
    4.0 tbsp Hershey's Special Dark Chocolate Chips
    0.5 cup Apple Sauce (Motts) Unsweetened
    1.5 cups (150.0 g) King Arthur almond flour

Directions

Cook at 350 degrees for 20-25 minutes Serving Size: Makes 12 muffins
