Introduction

This is my version of a chocolate zucchini bar. The original version had more eggs and less flour which made it spongier than I like. This is great by itself or topped with a cream cheese frosting. Ingredients

    3 large Egg, fresh, whole, raw
    .75 cup Canola Oil
    2 cup Granulated Sugar
    2.5 cup Flour - Gold medal all purpose flour
    2 tsp Baking Soda
    2 tsp Cinnamon, ground
    1 tsp Salt
    4 tbsp Cocoa, dry powder, unsweetened
    3.75 cup Zucchini (Shredded) (2-3 zucchini depending on size)
    1 tbsp Vanilla Extract

Directions

Preheat oven to 350.
Beat eggs and sugar together until well incorporated. Add oil and blend again. Add shredded zucchini and vanilla and mix. Finally add in all your dry ingredients and fold in until just blended. Over mixing can result in tougher bars.
Cover a jellyroll pan in parchment or grease it lightly. The inner dimensions of my pan are 17x11. Pour batter and bake for 22-30 minutes. Test after 22 minutes with a toothpick. Toothpick should come out clean.

Serving Size: Cut into 40 2.5 by 2ish squares
