Ingredients

    1.5 cup, sliced Zucchini
    8 spear, medium (5-1/4" to 7" lo Asparagus, fresh
    .25 cup, chopped Onions, raw
    4 tsp Garlic
    1.5 cup Hunt's Fire Roasted Diced Tomato
    .25 cup Tomato Sauce

Tips

Top with crumbled feta or Parmesan, fresh basil, or peppers.
Can also add chickpeas.
Can also be cooked in a crockpot.


Directions

Chop all vegetables and cook in olive oil over medium heat until onion wilts.

Add the diced tomatoes and heat.

Add the tomato sauce a tablespoon at a time until desired consistency.

Cook until vegetables are crisp tender.

If poaching eggs, add a little water.

Serving Size: About 1 cup serving each
