Introduction

By changing cream cheese to Neufchatel and using reduced fat sour cream, I was able to reduce the calories, fat, and carbs. Ingredients

    8 oz Neufchatel Cheese
    1/2 cup Sour Cream, reduced fat
    1 cup Part Skim Mozzarella Cheese Shredded
    1/2 cup Parmesan Cheese, grated plus 2 Tbsp
    1 package (10 oz) Spinach, frozen (thawed and chopped)
    6.5 oz jar Artichokes , chopped
    a few dashes Hot Sauce
    a pinch Red Pepper Flakes
    a pinch Garlic powder
    1 cup Bread Crumbs, Panko (Japanese style)

Tips

Serve with crackers or baked tortilla chips.


Directions

In a bowl, mix together Neufchatel cheese, sour cream, mozzarella, 1/2 cup parmesan cheese, spinach, artichokes, hot sauce, red pepper flakes, and garlic powder. Form into a ball and wrap in plastic wrap. Chill for at least an hour.
Make the breadcrumb coating. Preheat the oven to 350. Toss the Panko with 2 tbsp parmesan cheese, a little extra virgin olive oil, and a few red pepper flakes. Bake for 10 minutes until toasty.
When ready to serve, take the cheesecake out of the plastic wrap and roll it in the toasted Panko bread crumbs.
