Ingredients

    6 serving Fish (Frozen) - Tilapia Fillets - Walmart (1 serving = 1 (4 oz) fillet) ,thaw
    1 cup White Wine
    0.25 tsp Salt, Table Salt
    .50 tsp Pepper, black
    Sauce:
    3 tbsp Butter, salted
    .75 cup, chopped Onions, raw
    1.5 large (2-1/4 per lb, approx 3- Sweet peppers (bell)
    1 can Rotel diced tomatoes & green chilies
    .50 tsp Chili powder
    3 clove Garlic
    .50 tsp Thyme, ground
    .50 tsp Oregano, ground
    Topping:
    6 oz Mozzarella Cheese, part skim milk

Directions

Poach fish in white wine, salt and pepper to taste and put fish in baking dish

Make sauce. Melt butter and saute onions and sweet pepper. Cook until onions are clear then add the rest of ingredients except for cheese. Simmer until vegetables are softened. I also sometimes add a splash of white wine.

Spoon sauce over fish and top with mozzarella cheese. Bake at 350° until cheese is melted about 10 minutes.

Serve over rice.
