Ingredients

2.5 lb Beef chuck, arm pot roast
1.0 tsp Amul Pure Ghee 14g/1 tbs=1 serv
1.0 medium (2-1/2" dia) Onions, raw
1.5 tsp Curry powder
6.0 tsp Ginger Root
3.0 tbsp Fish Sauce
2.0 cup Del Monte Diced Tomatoes, No Salt Added
0.25 cup Applesauce, unsweetened
1.0 tsp, crumbled Bay Leaf
1.0 cup Beef Broth - Swanson Low Sodium
1.0 cup, strips or slices Carrots, raw
Directions
Brown beef in ghee in instant pot. Remove.
Add diced onions and sautee.
Add in ginger, curry powder, beef, tomatoes, fish sauce, applesauce and broth.
Cover pressure cooker.
Put on stew setting.
Once it is finished, add carrots.
Replace lid and cook on high setting for 7 minutes.
Once that is done, serve.
