Introduction

Ingredients

4 cooked (boneless and skinless) chicken breasts
1 cup Light Mayonnaise
1 cup, diced raw celery
1/2 tbsp chopped raw onions
1 tsp Garlic
1/2 cup ground almonds (optional)
1 cup, shredded Cheddar Cheese
1 cup crushed Kellogg's Corn Flakes Cereal
1 pat melted Butter
Salt and Pepper to taste
Directions
Preheat oven to 400
Chop cooked chicken into bite size pieces.
Combine Chicken, Mayo, Celery, Garlic and Onions in a bowl. Add almonds if desired and add salt and pepper to taste.
Spray a 9 or 13 inch inch baking dish (use 13 if you like lots of crunchy topping) with Non-stick cooking spray and spoon in chicken mixture.
Sprinkle with cheddar cheese.
In a separate bowl
MIx cornflakes and melted butter
You can add some garlic salt or other seasoning if you like more flavor
Sprinkle cornflake mixture on top of casserole and bake at 400 for 30-45 minutes.
Notes: I've also used fat free mayo and it works just fine. You can use fat free or low fat cheese if desired as well although it doesn't have as much taste.
