Ingredients

    3/4 cup Elmhurst unsweetened almond milk
    1 date
    1/2 cup carrot chunks (or whole baby carrots), fresh or frozen
    1 Tbsp raw cacao nibs
    1 Tbsp instant coffee/espresso powder
    1/2 large banana, frozen
    1/4 cup frozen blueberries
    1 Tbsp cocoa powder (unsweetened)
    1/4 tsp vanilla extract
    1 cup fresh spinach leaves

Tips

If you use frozen fruit/veggies in this smoothie, there's no need to add ice cubes. However, you can always add an ice cube or two to make the finished smoothie colder; you may need to add more water if you do this.
Note also that Elmhurst almond milk is very thick, almost like half and half. If you use a thinner almond milk that is lower in calories, you may want to use all almond milk instead of adding water.


Directions

Blend date, carrots, almond milk, cacao nibs, and instant coffee powder until smooth. (Note that dates and cacao nibs take longer to blend than other ingredients.)

Add all other ingredients except spinach, along with enough cold water to cover; add spinach. Blend until smooth.

Serving Size: Makes one 16 oz. smoothie
