Ingredients

2 cup (8 fl oz) Water, tap
2 Chicken Bouillon Cubes
3 cup Potatoes, diced
1/2 cup chopped Onions
1/2 cup, diced Celery
3/4 tsp Salt
2 cup skim milk Divided
2 Tbsp Flour - Gold medal all purpose flour
1 cup Light Sour Cream
2 Tbsp Parsley, dried
1 Tbsp chives, dried
Directions
In 3 Quart pan over medium heat combine water, bouillon, potatoes, onion, celery and salt. Bring to boil.
Reduce heat and simmer for 15-20 min until potatoes are tender.
Add 1 3/4 cup of the milk to pan. Combine flour to the remaining milk (1/4 c). Stir to form a smooth base. Add to soup stirring constantly. Bring to boil and stir for 2 min or until thickened and bubbly.
Add a small amount of soup to the Sour Cream and stir to mix. Gradually add sour cream to soup, stirring constantly.
Heat through but to not boil. Add parsley and chives just before serving.
