This hearty pancake substitute was a big hit with my family! This hearty pancake substitute was a big hit with my family!
Number of Servings: 2

Ingredients

    1 and 1/2 cups cooked Instant, Quick, and Regular Oats Cereal (cooked with water)
    2 large eggs
    2 oz Almond Milk, Unsweetened Vanilla (actually just enough to moisten the mixture)
    2 tsp no calorie sweetener
    1 tsp ground cinnamon
    1 tsp ground nutmeg
    4 large egg whites

Tips

You can be creative with this recipe by changing up the spices you might use and adding fruit.


Directions

Spray skillet with cooking spray. In a bowl mix all of the ingredients with a splash of milk. Add to heated skillet and cook as you would a pancake or scrambled eggs.
