Ingredients

20 oz of boneless, skinless chicken breast, cut into 1" cubes
1-15 oz can of low sodium canned black beans, drained and rinsed
1 large red bell pepper, sliced and halved (about 2 cups)
1 medium onions, quartered and sliced (about 2 cups)
5 oz Baby Bella Mushrooms, sliced (about 2 cups)
2 tbsp olive oil, divided
1 tsp crushed garlic
1 tsp seasoned salt (I used Lawry's)
1- 15 oz jar of Patak's Mild Curry Cooking Sauce
Tips
If you are watching your sodium, leave out the seasoned salt.
Directions
1. In a large pan or wok, heat 1 tablespoon of oil and then sauté the onion, pepper, and mushrooms until the onions change color and soften slightly. Remove from pan.
2. In the same pan, add the remaining oil and brown the chicken. Use the seasoned salt during the browning process.
3. Add the sautéed vegetables, the black beans and the simmer sauce to the chicken. Simmer over medium-low heat until chicken is cooked thoroughly.
4. Serve over brown rice or as a stand-alone dish.
