Introduction

My attempt to make a lower carb take on our favorite Thai Dish. Substitute chicken or steak for the shrimp or use all three to make it really special. Ingredients

    4.0 large Scrambled Egg
    3.0 medium Carrots, raw
    4.0 clove Garlic
    4.0 cup, pieces or slices Mushrooms, fresh
    16.0 oz Shrimp, raw
    0.25 cup Peanuts, dry-roasted
    3.0 tbsp Extra Virgin Olive Oil
    28.0 oz miracle noodle angle hair
    6.0 tsp Truvia Baking Blend Natural Sweetener with Sugar - serving size 1/2 tsp (2g)
    8.0 tbsp Lime Juice, juice of 1 lime
    2.0 serving Green Onion (fresh-1 stalk)
    40.0 grams Cilantro, raw
    4.0 cup bean sprouts
    6.0 tbsp Red boat fish sauce

Directions

For sauce: combine lime juice, fish sauce and Truvia and stir to combine set aside. Rinse and drain pasta as directed on package pat dry with paper towels as much as possible. Sautee mushrooms and carrots and one tablespoon of olive oil. Add garlic and saute until tender and slightly browned. Add sauce, bean sprouts and pasta and continue cooking on medium heat in skillet until bean sprouts are slightly tender. In a separate pan sauteed shrimp in remaining olive oil. Serve in a bowl with pasta bean sprouts and vegetables on the bottom topped with eggs and shrimp. Garnished with peanuts, green onions and cilantro if desired. Serving Size: Makes eight servings
