Introduction

This is a tasty way to use up those year end tomatoes that won't have time to ripen. This is a tasty way to use up those year end tomatoes that won't have time to ripen.
Number of Servings: 6

Ingredients

    4 cup Green Tomatoes
    1 cup Granulated Sugar
    .25 cup, packed Raisins
    .5 fl oz Rum
    2 tbsp Argo 100% Pure Corn Starch
    .5 tsp Salt
    1 tsp Cinnamon, ground
    .25 tsp Nutmeg, ground
    1 pie shell (9" dia) Pie crust, graham cracker

Directions

If you don't already make your own rum raisins, pour the rum over the raisins and let them sit while you do everything else.
Remove tomato stems, then quarter and cut into slices.
Place in large bowl.
In a small bowl, combine the corn starch with 1/4 cup water and stir until blended.
Add the sugar to the corn starch and stir well.
Sprinkle spices and salt over tomatoes.
Pour sugar mixture over tomatoes and toss gently until well coated.
Add rum raisins and stir again.
Allow mixture to sit for 15 minutes while the oven heats up to 450°F
Pour the mixture into the pie crust.
Bake at 450°F for 10 minutes.
Turn heat down to 350°F and bake 35 to 45 minutes.
