Ingredients

1/2 pound diced turkey pastrami (or turkey bacon)
1 medium onion, chopped
1/2 cup chopped green pepper
12 eggs
1 cup 1% milk
1 package (16 ounces) frozen hash brown potatoes, thawed
1 cup (4 ounces) shredded cheddar (or colby jack) cheese
1 tsp salt
1/2 tsp pepper
1 tbsp olive oil
Directions
Preheat oven to 350 degrees.
Spray 13x9x2" pan with Pam.
a.) In a large skillet, cook turkey pastrami over medium heat until slightly browned. Set aside. Add 1 tbsp olive oil to same pan and saute onion and green pepper until tender; remove and add to turkey.
b.) In a large bowl, whisk eggs and milk. Stir in hash browns, cheese, salt, pepper and onion/meat mixture.
c.) Pour mixture into greased baking dish and bake at 350 degrees for 35-45 minutes until a knife inserted in the center comes out clean.
Yield: 8 large servings
