Introduction

I "poached" the chicken the day before in heavily seasoned water in a pressure cooker. It had amazing flavor before I added it. (Cumin, chili powder, Better Than Bullion low sodium Vegetable Base) Those aren't calculated into the chicken calories, but if you are REALLY watching counts, it might add 15??? Ingredients

    1.5 cup Skinless Boneless Chicken Breast, Poached (by PERKLE)
    4 oz Chicken -Boneless, skinless chicken thigh (by JUSTKLH)
    200 grams Beans, black
    2/3 cup kernels Yellow Sweet Corn, Frozen
    1 cup Diced Tomatoes, Muir Glen Organic, No salt added
    1 cup, chopped Onions, raw
    1 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers)
    2 clove Garlic
    .5 tsp Better Than Bullion Low Sodium Vegetable Base
    .5 tbsp Butter, Land O Lakes spreadable all natural butter with Canola Oil

Tips

I did the pressure cooking the day before, so prep time was decreased.


Directions

Saute onion, pepper, and garlic in butter. Add more cumin and chili powder if wanted. Dice chicken and add. Add all other ingredients and simmer on stove until flavorful enough, or you're starving!!
