Ingredients

    1 cup flax seed meal
    1/4 cup protein powder
    2 teas baking powder
    1 tbsp cinnamon
    1 teas nutmeg
    1/2 teas salt
    Equivalent of 1/2 cup of brown sugar for artificial sweetener (Sweet'n Low Brown Sugar, or equivalent)
    1/4 cup sugar
    4 large eggs, beaten
    1/8 cup olive oil
    1/8 cup no sugar apple sauce
    1/2 cup water
    1 tbsp vanilla
    1 med apple, chopped finely
    1/2 cup chopped, toasted almonds

Directions

Preheat oven to 350 F. Grease 12 muffin tin well.

Mix up dry ingredients and sift. Mix up wet ingredients in a mixer. Combine and then let batter stand 10 minutes. Put into muffin tin and cook for 18 minutes, or until toothpick comes out clean and muffins barely start to pull away from the sides of the tin.

If you have extra calories for the day, you can top with peanut butter.
