Ingredients

1 cup, sliced Zucchini
2 tbsp KROGER EXTRA VIRGIN OLIVE OIL
4 tsp *BRAGG Liquid Aminos (by PINKIEFROMPQ)
1 serving Maple Grove Farms 100% Pure Maple Syrup 1 Tbspn
.50 tsp Colgin Natural Hickory Liquid Smoke (by CATSBANE)
.50 tsp Paprika
Tips
I prefer using zucchini. For me the eggplant is a bitter. It a matter of taste. Plus I found using a dehydrator for this recipe is better that using the oven. Also when using the zucchini, only bake in the oven at 200 degrees or the zucchini will burn.
Directions
Preheat oven to 300°. Line 2 baking sheets with parchment paper.
Cut zucchini or eggplant in quarters, lengthwise. Slice each quarter into long, thin strips.
In a small bowl, whisk together olive oil, soy sauce, maple syrup, paprika, and liquid smoke.
Place eggplant slices onto baking sheets and brush both sides with sauce. Season with pepper.
Bake until eggplant is cooked through and beginning to get crisp, 45-50 minutes.
Serving Size: 20 or more strips of bacon
