Ingredients

    3 cups, dry 10 bean soup mix
    2 cup fat free, less sodium chicken broth
    4 large (7-1/4" to 8-1/2" long) carrots, chopped
    3 stalk, large (11"-12" long) celery, chopped
    1 medium (2-1/2" dia.) onion, chopped
    2 large sweet bell peppers, chopped
    2 tsp minced garlic (4 cloves)
    1-10 oz. can no salt added diced tomatoes & green chilies
    1 tsp fresh ground black pepper
    1-12 oz. can SPAM (Black Pepper Style)
    6 cup water (divided: 4 cups/2 cups)
    1 tsp seasoned salt

Tips

Make sure you rinse your beans first. Add the SPAM near the end of the cooking time, otherwise it becomes soggy (I learned from experience!)


Directions

1. Place the beans, 4 cups of water and 2 cups of low sodium fat free chicken broth into a large slow cooker (crock pot), cover, and turn to high. Cook until the beans begin to become tender (about 3 hours).
2. After beans have begun to become tender, add 2 more cups of water and all of the other ingredients, EXCEPT THE SPAM, and cook on high for another 2 and 1/2 hours. Add the SPAM and lower temperature to medium and cook for another 1/2 hour.
3. Makes 7-2 cup servings.
