Introduction
Fruit and Nut Oatmeal, less than 200 calories for delicious large and filling breakfast. Vegan if without milk. For supreme flavor, toast steel cut oats and almonds single layer in sheet pan in 350 oven until just lightly browned before adding to recipe. Ingredients

1 cup steel cut oats, dry
1/3 cup flax seed
2 cups water
1 cup thick cut rolled oats, dry
1/3 cup cranberries, dried, sweetened (Craisins)
1/3 cup almonds (sliced, slivered or chopped)
1 large (3-1/4" dia) apple, skin on, cored and chopped medium
1 cup (or more) water, boiling preferred
1 tsp cinnamon
1 tsp vanilla
2 cups whole milk
optional: sweetener of choice
Directions
In heavy medium saucepan, boil 2 cups water, add steel cut oats and flax seed, turn to low and cover, cook for 15 minutes stirring often. Add remaining ingredients except milk and sweetener (after coring and dicing apple) with additional 1 cup boiling water (or more), bring back to boil, turn to low and cook for additional 15 minutes uncovered, stirring very frequently to avoid sticking and burning. Stir in vanilla and cinnamon, turn into Pyrex container, preferably 9X9 or 10X13 for easy portioning. Allow to cool for 10 minutes. Add 1/4 cup milk and sweetener of choice if desired to individual portions before serving. Will keep for up to five days covered in refrigerator. Microwave portions for one minute to reheat.
