Introduction

This tangy, flavorful condiment is great as a sauce for falafel and kebabs. This tangy, flavorful condiment is great as a sauce for falafel and kebabs.

Ingredients

    2 cup Yogurt, plain, low fat
    1 clove Garlic, minced (or to taste)
    2 tsp Salt (or to taste)
    1 tbsp Lemon juice
    .25 C. Fresh Dill, minced finely
    1/2 Cucumber, peeled and diced finely

Directions

Line a collander with paper towels or cheese cloth and measure 2 C. plain yogurt into it. Place overa bowl in the refrigerator at least 3 hours, or as long as overnight. (The yogurt will drain of excess liquid and become much thicker.)

Mince dill and garlic and dice cucumber. Combine in a medium bowl with the condensed yogurt and mix in salt and lemon juice. Serve with falafel, kebabs, or (my favorite) cold roast beef. Serving size: 2 T.
