Ingredients

CRUST:
Whisk together:
2 c. Almond Flour, Food to Live
1/3 c. Lakanto Golden Monk Fruit Sweetener
1 tsp Baking Powder
0.25 tsp Himalayan Pink Salt
ADD:
1 tsp Vanilla Extract
I egg, large
2 tbsp Butter salted
Mix until combined then pat into 9 or 10" pie plate
Bake 350 degrees 25 minutes or until lightly browned
FILLING:
Mix together until smooth:
2 - 8 oz. blocks of cream cheese, softened
12 tbsp Aldi’s, Countryside Creamer Heavy Whipping Cream
1 tsp Vanilla Extract
1/2 cup Powdered Monk Fruit Sweetener - Lakanto Classic
Add:
1/2 c. Sour Cream - Aldi's Friendly Farms
Pour into completely cooled pie shell. Refrigerate 1 hour before serving.
Tips
Be certain your shell is completely cool before adding filling. Also keep in mind when substituting your sweetener Lakanto powdered sweetener takes only 1/2 of what "sugar" does. So dependent on the ratio of your sweetener to sugar you will need to adjust. ENJOY!
Directions
Bake shell approximately 25 minutes until lightly browned. I make certain mine is brown all over.
