Introduction

Ingredients

2 tbsp Olive Oil
2 cloves Garlic, minced
1 1/2 cups Sweet Corn, Fresh about 4-5 ears
1 red pepper, diced small
1 green pepper, diced small
1 medium size vidalia onion, diced small
1 1/2 cups Summer Squash, diced small, about 4
1 teaspoon italian seasoning
Directions
The key to this dish is having the vegetables that are diced to all be about the same size, hence the name confetti. Use a small dice, no larger than about a half inch. The exception, of course, is the corn which you slice off the cob raw.
After all your dicing, heat the oil in a large skillet and add the minced garlic cooking for about two minutes. Add the vidalia onion and cook for about another two or three minutes. Add the remaining vegetables and the italian seasoning.
Cook for about five minutes lightly covered (I use foil because I do not have a lid large enough for my large skillet), stirring occasionally. Cook a little longer if desired.
Makes about 8 half cup servings.
