Number of Servings: 1

Ingredients

    1/2 avocado
    1/2 tomato, medium
    1/4 cup white beans
    1/2 cup arugula or mixed greens
    4 basil leaves
    Lime juice, 1/2 of a lime
    1/4 tsp salt
    1/8 tsp pepper

Directions

Chop the avocado and tomato into 1/2" pieces.
Tear greens into bite sized pieces, and the basil into small pieces.
Put greens and avocado mixture in a bowl with the beans.
Squeeze the lime juice over the salad, and sprinkle with salt and pepper.

    O.K.
    Not nearly as flavorful as I had hoped. I added some balsamic vinegar but it didn't really help. I also tried it with some salsa, which was a little better. - 5/25/08

    Very Good
    The lime juice on the greens was wonderful. Although I like beans, I didn't care for them on the salad. I will probably add some onion and maybe cucumbers next time. May try black beans on it. - 3/2/08

    Incredible!
    Have made this several times - but did not rate it. I use cooked soy beans instead of white. Same great flavor though. Spinach and dried basil work as substitutes for arugula and fresh basil leaves. An excellent high-fiber lunch for one! Start with 1/2 of the lime juice and build up to taste. - 10/17/07
