Introduction

Read an article that said to eat your main meal at breakfast, next heaviest meal at lunch, and light meal for dinner. Also, to eat lots of vegetables. Breakfast was always a challenge for me. I'm diabetic and must limit my carbs, so no breads, pancakes, etc. This was my solution. Ingredients

    1 serving Tomatoes, Roma, Fresh, 1 Med
    2 cup Baby Spinach - Fresh Express (bagged)
    2 serving Onions, yellow sauteed 1 cup
    2 cup, sliced Summer Squash
    2 serving carrot, 1 raw (7-8" long)
    2 cup mini sweet peppers
    32 oz Aldi ground turkey
    16 oz Kirkwood mild turkey breakfast sausage
    6 large Egg, fresh, whole, raw

Tips

The vegetables can be changed, just be sure to keep them low carb.


Directions

Bake at 350 degrees 55-65 minutes or until internal temperature of 165

Serving Size: makes 2 large loaf pans, 8 servings per pan
