Ingredients

    Roasting Chicken, bone and skin removed (I buy one from the market pre-cooked)

    Broccoli, cooked, 14oz bag (fresh or frozen)

    Kraft Mayo Light Mayonnaise, 1 cup

    Cream of Chicken Soup, 2 cans
    (I recommend using regular cream of chicken instead of the fat free version because it changes the taste - but you can judge for yourself)


    Curry powder, 2 tbsp

    Lemon Juice, 1 TB

    Kraft 2% American Cheese Singles, 10 slices (Chedder might work as well, but the original recipe calls for American)

    Butter, unsalted, 2 tbsp stick melted

    Bread crumbs, dry, grated, plain, .25 cup

Directions

Steam the broccoli (make sure you don't overcook it!) and drain. Spread evenly over LARGE casserole dish as the bottom layer.

Remove the skin and bones from the chicken and tear into bite-sized pieces. Spread chicken evenly on top of the broccoli.

Mix the mayo, cream of chicken, curry powder and lemon juice together. Spread mixture evenly over chicken.

Place the slices of cheese on top. Melt the butter and mix with the bread crumbs. Sprinkle buttered bread crumbs over the cheese.

Bake at 350 degrees for 25 minutes. Serves 8 and tastes even better the next day!
