Ingredients

1 cup Ragu Old World Style Traditional Tomato Sauce
1/3 cup Sunny Select Tomato Sauce (8 oz.) can
11 tomatoes Trader Joe's Heavenly Villagio Marzano Tomatoes
1 eggplant, peeled (yield from 1 Eggplant, fresh
fresh rosemary, dried oregano, olive oil, granulated garlic, kosher salt, pinch of sugar
Directions
Bake eggplant in 350 degree oven for 1 hour 20 minutes. Remove when tongs and allow to cool to room temperature before scraping flesh from skin. Discard skin and seeds.
Dice Heavenly tomatoes, sprinkle with kosher salt and spices in a medium pan and saute in olive oil until wilted and fragrant.
Add Ragu and Sunny Select tomato sauces and eggplant puree to pan, Sir and remove pan from stove.
Puree sauce ingredients using an immersion blender and return to the stove top. Heat all ingredients to a bubbling boil, carefully taste sauce. If it tastes bitter add a pinch of sugar. Stir and heat sauce through. Serve over pasta.
