3/4 C millet flour
1/4 C soy flour
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
3/4 tsp cinnamon
1/4 tsp each of ginger and allspice
1/4 spelt bran or bran buds ground
1/8 C olive oil
1/4 C apple butter
1/2 C maple syrup
1 1/2 TBLS molasses
3/4 C unsweetened soy milk
1/2 C cashews (no salt)
1/2 C sliced mango
Directions
sift dry ingredients
mix well all wet ingredients
gradually add dry to wet mix with fork.
do not overmix
drop into 12 greased muffin cups
bake at 325 for 20 minutes watch closely
