Introduction

So good, and very versitile. Using skim milk makes it still OK for most diet plans. Great for eating with pasta, chicken, or as a base for cream and cheese sauces. Ingredients

    Milk, nonfat, 2.25 cup (remove)
    Butter, unsalted, .25 cup (remove)
    Flour, white, .25 cup (remove)
    Nutmeg, ground, .5 tsp (remove)

Directions

Heat milk in a microwave safe dish until just about to boil. While milk is heating, melt butter in a heavy bottomed sauce pan. Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown — about 2 minutes. Add 2 cups of the hot milk, continuing to stir as the sauce thickens. Bring it to a boil. Lower the heat, and cook, stirring for 2 to 3 minutes more. Remove from the heat. Stir in the remaining .25 c milk and nutmeg slowly, using a wire wisk to thin sauce down a little bit.
To cool this sauce for later use, cover it with wax paper or pour a film of milk over it to prevent a skin from forming.

**salt and pepper can be added, if desired, for additional flavor. I find it doesn't need it, but everyones' tastes are different. garlic powder and parmesan cheese added turns this into a classic alfredo sauce. Adding a yellow cheese makes a nice mac n cheese base.
