Ingredients

    4 whole eggs
    4 egg whites
    1 package chopped frozen spinach
    1 roasted red pepper ( from jar)
    1/2 sliced yellow onion
    2 tsp. extra virgin olive oil
    1/4 cup grated parmesan cheese
    1/2 tsp oregeno
    1/2 tsp garlic powder
    dash of salt and fresh ground pepper

Directions

makes 8 slices.
Heat 2 tsp olive oil in skillet. Add sliced onions, diced red pepper and cook until softened. Add cooked and drained spinach, then sprinkle with oregeno, garlic powder, salt, and pepper. Whip egg whites, eggs, and 2 tbls. water together and pour evenly over vegetables in skillet. Over medium- low heat allow eggs to set up until cooked to edges. Center will be liquid but bottom and edges are set. Sprinkle with parmesan cheese and put under high broiler for 1-2 minutes until the center is set and cheese is browned. Cut into 8 wedges and serve or store for quick and easy breakfast.
