Number of Servings: 3
Ingredients
-
Marinade: 1/4 cup Lime Juice
1 Tbl. Extra Virgin Olive Oil
1 Tbl. Heinz Zero Sugar Ketchup
1 tsp. Salt
1 tsp. Chili powder
1/4 tsp Garlic powder
1/4 tsp black pepper
Filling: 1 Tbl. Extra Virgin Olive Oil
10 oz Lean Beef cut into thin strips
1/2 cup Green Peppers, sliced thin
1/2 cup Onions, cut in strips
2 cloves garlic
This same marinade works for chicken as well.
Directions
Mix all the marinade ingredients together and set aside.
Thinly slice beef and add to marinade.
Chill for at least 1 hr or overnight (or just cook immediately as I usually do)
Heat a large non-stick skillet. Add beef and all the marinade juices to skillet, stir occasionally till no longer pink. Strain beef from marinade and set aside both. Add a little oil to the skillet and saute onions and peppers, add marinade to pan when vegetables are tender.
Serve meat, vegetables on a bed of lettuce, optional toppings or a warm tortilla for those not doing keto.
