Ingredients

    1.0 tbsp, crumbled Bay Leaf
    0.25 tsp Pepper, black
    1.5 tsp Salt
    4.0 tbsp, drained Capers, canned
    2.0 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh
    12.0 clove Garlic
    1.0 medium (2-1/2" dia) Onions, raw
    3.0 tbsp Extra Virgin Olive Oil
    2.0 tbsp (C) Vinegar, Red Wine (Gr Value)
    4.0 oz Apothic Red Wine
    1.5 cup Hunt's diced tomatoes , basil, garlic & oregano

Directions

Cut eggplant into 1/2" cubes, slice garlic put everything in the slow cooker do not stir! Cook high 3 hours, the gently stir and cook 2 more hours at high. Serving Size: 1/4 cup
