Introduction

Lovingly plagiarized from Doris Janzen Longacre's "More With Less Cookbook." Her recipe calls for peaches, but any fruit will do. The recipe calls for 3 tablespoons of cornstarch, not the wacky number below. Lovingly plagiarized from Doris Janzen Longacre's "More With Less Cookbook." Ingredients

    .75 cup Granulated Sugar
    .1875 cup Cornstarch
2 cup (8 fl oz) Water, tap
    2 cup, halves Strawberries, fresh
    2 tbsp Lemon juice

Tips

Feel free to play with the amount of sugar in this recipe - it does need a little as a preservative, but with the natural sweetness of the fruit you can definitely get by with less.

This would be great with anything that needs a touch of sweetness or fruit - ice cream, pastries, even a glass of water. Get creative!

If you don't expect to use it up quickly you can also can or freeze the excess in smaller containers. Or just go crazy and enjoy the whole thing in a few days!

Directions

Combine the sugar and cornstarch in a saucepan, and add the water. Bring to a boil, stirring constantly.

Depending on the texture you want, you can grind the fruit in a blender or food processor. Otherwise, add the fruit to the boiling water mix and simmer until the fruit softens to the desired texture.

Add lemon juice. Allow it to cool to an edible temperature and serve immediately.
