Ingredients

    3 cup Flour - Gold medal all purpose flour
    3 tbsp Poppy seed
    1 cup Granulated Sugar
    1 TBS Baking Powder
    1/2 tsp Baking Soda
    1 tbsp Lemon Zest
    1/2 tsp salt

    2 large Egg, fresh, whole, raw
    1 fl oz Lemon Juice
    1.5 cup Yogurt, plain, whole milk
    1/2 cup melted butter, cooled

    2 fl oz Lemon Juice
    2 TBS Granulated Sugar



Directions

Mix flour, 1 cup sugar, poppy seeds, lemon zest, baking soda, and baking powder together and mix this well. In separate bowl whisk eggs well with the salt. Then add 1 oz lemon juice and yogurt and mix well. Carefully fold this into the dry ingredients. Then fold in the melted butter. Be very careful not to overmix this mixture, just incorporate everything together. Place into paper lined cupcake/muffin tins. Bake at 375 for about 25 minutes.
While muffins are baking in a saucepan bring 2 oz lemon juice and 2 TBS sugar to a boil and reduce it til syrupy.
When muffins are done, brush tops with lemon glaze. Let cool on rack.
