Quick cold weather dinner. Quick cold weather dinner.

Ingredients

    0.5 stick Butter, salted
    4.0 cup Chicken Stock (Chef''s Cupboard - Aldi''s)
    1332.0 gram Little Potatoes (Little Potato Company) 5-6 potatoes per serving
    121.0 gram Publix Hickory Smoked Bacon (lower sodium) 1slice
    3.0 cup Green Beans, (Frozen), french style -Green Giant

Directions

-Cut slices of Bacon in 8ths. -Cook Bacon in a deep pan till almost done. -Add frozen Green Beans and seasoning to taste. -Add quartered Potatoes, Chicken Stock and Butter. -Cook till almost all the liquid has cooked off, stirring frequently. -serve and enjoy.

    Very delicious, but I have to be cautious because the serving size is for 10 people and I occasionally struggle with portion control (diabetic). - 10/7/19
