Ingredients

3 large egg whites
150 grams sugar
1 tsp vinegar
1 tsp cornstarch
1 tsp vanilla
Directions
Makes three large servings, could be split further easily.
Beat the egg whites, gradually adding sugar by teasponnful, and cornstarch, vinegar and vanilla near the end when you have stiff peaks.
Make about an 8 inch circle on parchement paper on a silicone mat or cookie sheet. Spread your mixture into the circle, building up the sides slightly.
Preheat oven to 150°C.
As soon as you put the meringue in, turn oven down to 140°C.
Bake for an hour, turn oven off, leave in to cool completely and dry out. Even overnight is ok.
Take off the baking paper, being very careful. If you break it, just chiunk up and serve in pretty glasses with cream, or pudding and fruit. Ideally, you fill the center with your whipped cream or pudding, then sprinkle on the pretty fruit. Leave in fridge about 45 minutes, then serve.
Leftovers don't keep well.
