Ingredients

3 cups sugar snap peas or snow peas
2 Tbsp. lemon juice
2 tsp. olive oil
salt and pepper to taste (other herbs may be used)
4 Flounder (or other fish) fillets, 6 ounces each
Directions
1. Preheat oven to 400F, or prepare gas or charcoal grill.
2. In a bowl toss together peas, lemon juice, olive oil, salt, and pepper.
3. Coat 4 15-inch lengths of parchment paper or foil with cooking spray. Place each fillet on one-half of the paper. Top with about 3/4 cup of the pea mix. Fold the paper over the fish and peas and seal by folding over all edges.
4. Place the packets on a baking sheet or directly onto the grill and cook for 10 to 12 minutes.
