Ingredients

    1 red and one orange bell pepper, cut into thin slices
    1 yellow squash, cut into slices
    1 zucchini, cut into slices
    2 cups long grain brown rice, cooked
    1 tablespoon extra virgin olive oil
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    1 tablespoon dillweed
    Salt, and pepper to taste (optional)

Directions

On stove top, heat olive oil on medium heat.
Add vegetables and all spices.
Cook until tender.
Serve on top of cooked rice, and enjoy!
