Introduction

I wanted to use the Beyond Sausage I bought and came up with this recipe. You don't have to use the Hot Italian flavor, but it's very good. I wanted to use the Beyond Sausage I bought and came up with this recipe. You don't have to use the Hot Italian flavor, but it's very good.
Number of Servings: 4

Ingredients

    2 Links Beyond Sausage (Hot Italian)
    1 tbsp Olive Oil
    4 Tbsp Goya Sofrito Tomato Cooking Base
    1 large onion, cut into strips
    1 large green pepper, cut into strips
    1 cup dry whole wheat penne pasta

Tips

You can use pasta or tomato sauce in place of the sofrito, it just won't be as tasty. And of course, you can add more sauce if you want.


Directions

PREP: Slice onion and pepper. Cut up "Sausage" into bite-sized bits. start pasta, cook according to package directions.

HEAT large skillet to medium-high heat. add oil.

ADD sausage and cook, stirring frequently, for about 2 minutes or until a little brown.

ADD pepper and onion, stir to coat.

REDUCE HEAT to medium and cover

SAUTE until soft, about 6 minutes

DRAIN pasta, add to skillet, add sofrito base. Stir and remove from heat.

SERVES 4
